Two Stacks' New Polaris Release Features First Fully Peated Single Malt
Two Stacks Irish Whiskey is proud to announce the launch of Polaris 3.1, its first peated release, available on August 30th at 12 noon.
Distilled at Great Northen Distillery in 2019, the 5-year-old malt first matured in bourbon casks before a 14-month finish in cab franc ice wine from Ontario, bottled at 58%, cask strength.
This stunning single cask carries a tremendous amount of character and flavour, the beautifully crafted malt from GND has taken the best qualities from the cask and given a whiskey that delivers both complexity and originality.
Limited to only 198 individually numbered bottles but for the first time the release will be available in Dram in a Can, with plenty of 100ml miniatures stocked and ready for people to enjoy.

Official tasting notes, bottled at @ 58% ABV
Nose: From the start, the peat dominates and slowly unfolders notes of light ash, red berries, clove, red apple and citrus peel.
Palette: Beautifully balanced between the ice wine sweetness and the stunning peated malt, inviting drops of smoked apple, cherries and light tobacco. The texture is fat and jammy, with a hint of vanilla spice.
Finish: A touch of salted toffee, campfire smoke and ash.
